How do hatcheries identify cock and hens at day old? Isn’t that a mystery?

The chicks are sex-linked. For such chicks, you can differentiate between male and female by just looking at the feather colours and patterns. Males will have different feather color and pattern from the female.

Another way is a nasty one. It's called vent sexing. Only professionals with years of experience can differentiate with this method. It involves looking at the chick's vent to differentiate. But with the feather method, I don't think this method is still in use.
